Capsaicin (trans-8-methyl-N-vanillyl-6-nonenamide) is a naturally occurring alkaloid derived from plants of the genus Capsicum, better known as chili pepper fruit. The molecular formula for capsaicin is C18H27NO3. It is a crystalline, lipophilic, hydrophobic, colorless, and odorless white powder. Capsaicin can reduce cholesterol, blood lipid content, blood sugar content and it also has properties of anti‐oxidative, anti‐inflammatory, anti‐obesity, and analgesic. Therefore, it occupies an important position in the food and pharmaceutical industries.

The development of detection methods for capsaicin using simple and accurate approaches is scientifically and technologically important for the food, herbal, health, and pharmaceutical industries.
